Forry had crab enchiladas --
While I had what has become my favorite, Nuevo Chile Relleno --
Instead of a chile stuffed with a little bit of cheese and then battered and deep-fried, this one is stuffed with shredded pork and pine nuts, then baked. Not only is it delicious, but so is the sauce! Tia Rosa's is a very popular restaurant, especially on the weekends (we've learned to not even try to go there on Friday or Saturday!). Even getting a parking spot is a challenge -- and they have a large lot both in front and in back.
